Hydrofobiny - produkty metabolizmu grzybów strzępkowych jako potenchalna przyczyna gushingu pierwotnego piwa

Abstract
Issues related to hydrophobins produced by filamentous fungi, which are responsible for the primary gushing of beer were presented in this article. The most important aspects connected with microbial infection of barley and malt, and methods of preventing and reducing the incidence of the primary gushing during malting and brewing were discussed. Attention was paid to necessity of finding a quick and easy method of evaluating the propensity of beer to gushing at the stage of raw material selection. W artykule przedstawiono zagadnienia związane z hydrofobinami wytwarzanymi przez grzyby strzępkowe, które są odpowiedzialne za gushing pierwotny piwa. Omówiono najważniejsze aspekty dotyczące infekcji mikrobiologicznej jęczmienia i słodu oraz sposoby zapobiegania i ograniczania występowania gushingu pierwotnego piwa podczas słodowania i procesu produkcyjnego. Zwrócono uwagę na konieczność poszukiwania szybkiej i łatwej metody oceny możliwości wypienienia się piwa na etapie doboru surowca.
