Wybrane właściwości prozdrowotne produktów z bzu czarnego (Sambucus nigra L.)

Abstract
Elderberry (Sambucus nigra L.) is well known and valued plant in many countries. Aim of that study was to analyze selected products made from elderflower and elderberry coming from local and foreign markets. There was also examined total phenolic and flavonoid contents and DPPH radical scavenging activity. The greatest pro-health properties among tested products had mousse and juice and the least had syrup made from elderflower. Bez czarny (Sambucus nigra L.) jest rośliną znaną i cenioną w wielu krajach. Przedmiotem pracy była analiza wybranych produktów z kwiatostanów i owoców tej rośliny, pochodzących z rynku krajowego i zagranicznego. W produktach oznaczono zawartość polifenoli ogółem, flawonoidów oraz aktywność przeciwutleniającą względem rodnika DPPH. Wśród analizowanych produktów największe właściwości prozdrowotne wykazywały mus i sok, natomiast najmniejsze syropy otrzymane z kwiatów.
